Scoby stands for Symbiotic Culture of Bacteria and Yeast. It is, as it says, a colony of bacteria, that ferment the tea and sugar, making kombucha, which is a living brewed drink. When we drink it, the bacteria and yeast move in to our gut flora, integrating our microbiota, inhabiting and colonizing our body.
In Social Anthropology, Culture defines a complex whole of knowledge, making, rituals and habits of a ethnic or social group.
